Loaded Nachos with Shredded Chicken

high-protein quick umami

Health Benefits

High protein from shredded chicken and cheese; fiber and iron from black beans. The sour cream and Famous Dave's pickled chips add brightness and satisfaction without guilt. This version beats typical restaurant nachos loaded with processed cheese sauce — you control what goes on your plate and can keep portion size reasonable.

Ingredients

Assembly

  1. Put the corn chips on a plate.
  2. Add shredded chicken (or ground beef) and shredded cheddar cheese.
  3. Microwave until the cheese is melted.
  4. Top with canned tomatoes with green chilies, chili chipotle sauce, sour cream, and Famous Dave's sweet and spicy pickled chips.

Macronutrients

30–35g Protein
30–40g Carbs
25–30g Fat

Protein from chicken, cheese, and beans · Carbs from chips and beans · Fat from cheese, sour cream, and chipotle sauce

Micronutrients

Iron & magnesium (black beans), calcium & vitamin A (cheddar), vitamin C & potassium (tomatoes with green chilies), B vitamins (chicken & beans).

David's Notes

Put the chips, meat, and cheese on a plate and microwave until melted, then add other toppings. The pickled chips add brightness and keep you eating slower. Don't skimp on the sour cream — it belongs there. Portion control is the plate size, not the toppings.

Replaces

Greasy takeout or fast food nachos loaded with processed cheese sauce and fried chips.
