Carrots are rich in beta-carotene (vitamin A) and fiber. Air frying uses far less oil than deep frying or heavy sauteing. Orange zest adds vitamin C and cardamom/ginger bring anti-inflammatory compounds — flavor built from spices instead of a sugar-heavy glaze.

Add baby carrots to an air fryer-safe dish, cover with a little water, and microwave covered until softened. Uncover, then pop them in the air fryer to let them get some color. Finish with butter (or olive oil), a pinch of salt, ground cardamom, a pinch of ground ginger, a drizzle of maple syrup, and orange zest. Pumpkin seeds on top for crunch are a good option too.
